My translation of strawberry shortcake is a very rich, very short scone, doused in macerated strawberries and their juices.

They are a simple pancake batter with corn, spring onions and chilli stirred in but are sweet, spicy, crunchy, tasty.

Orange & Elderflower Liqueur – made with gin or vodka

Being pip-free does not make this a true ‘bramble jelly’ but it’s a very tasty seedless blackberry jam with a hint of lime.

Overnight Oatcakes – make the batter up the night before then flip them in the pan for breakfast.
