Decadent double chocolate strawberry shortcakes

‘Double Chocolate Mousse Cookies’ for #baketogether. They were delicious and very chocolaty; a big hit at home! I did two versions.

Rich and tangy lemon ice cream sandwiched between melting moment cookies. So refreshing.
